Okonomiyaki can be translated to "grill as you like". It is a very versatile dish which can be adapted with different fillings and toppings. I'm keeping my recipe simple today without using meat or seafood but I have to introduce an important ingredient here. It is Nagaimo, a Japanese Yam packed with nutrients which are good for digestive health. Its slimy texture helps wet ingredients cling together and hold in place while keeping moisture inside food. Adding grated nagaimo to the cabbage pancake does make a huge difference to the mouthfeel.
