Sautéed Zucchini
To make it a complete meal, serve alongside your favorite protein and grain.

1 medium zucchini, cut into ⅛-inch matchsticks
1-2 tablespoons olive oil
1-2 tablespoons almonds
salt and pepper, to taste
Wash the zucchini and cut into matchstick size pieces.
In a large pan, heat the olive oil over medium heat until hot but not smoking. Add the almonds and cook them until golden brown, about 1-2 minutes
Add the zucchini and cook until warm and just beginning to soften. Remove from heat and add salt & pepper to taste. Serve with love!
