2 mangos
1/2 small red onion, diced
1 green apple, diced
1/4 cup lime juice
3 tablespoons olive oil
1/4 teaspoon kosher salt
dash crushed red peppers (optional)
1/4 cup fresh cilantro or parsley
3 tablespoons roasted sunflower seeds
Wash all produce. Carefully peel and cut the mango away from the pit and into bite size pieces.
Place mangos, onion, and apples in a bowl. Add lime juice, olive oil, salt and crushed red pepper, if using. Gently toss and adjust the seasoning to taste.
Right before serving, sprinkle salad with cilantro/parsley and sunflower seeds. Serve with love.
This salad is best enjoyed immediately but you can store it in the fridge for up to 1 day. Store sunflower seeds separately and add to the salad when you are ready to eat.
