This salad is cool, refreshing and packed with flavor. There are many variations of this dish. This version is simple to make with ingredients that are easy to find. Pair it with your favorite protein or add it to brown rice bowl.

1/2 - 1 tablespoon honey
3 tablespoons unseasoned rice wine vinegar
1 tablespoon sesame oil
pinch of salt (~1/8 teaspoon)
1-2 cucumbers, sliced in half moons
1 teaspoon sesame seeds
dash red pepper flakes
1-2 green onions, thinly sliced
Wash all produce. Peeling cucumbers optional.
Make the dressing in a large bowl. Add honey, rice wine vinegar, sesame oil and salt. Whisk together until the honey has dissolved. Add the sliced cucumbers. Mix well – adjust the seasoning to taste.
Sprinkle with sesame seeds, red pepper flakes, and green onions. Serve with love!
Leftovers can be stored in the fridge for up to 3 days. Cucumbers will release liquid – drain before serving.
