Sweet and tart. Easy to make at home to serve with pork chops or on oatmeal, yogurt, cottage cheese, whole wheat toast and more!

1/2 lb (about 6) plums, pits discarded, roughly chopped
pinch of salt
1/4 teaspoon cinnamon
1/2 tablespoon honey
1/2 teaspoon vanilla
Rinse the plums.
Cook the plums:
Stove top: Add a small amount of water to a saucepan or small pot – just enough to line the bottom. Add chopped plums, salt, cinnamon, honey and vanilla. Heat the plum mixture over medium heat 15 – 20 minutes, until it is your desired texture.
Microwave: Add all the ingredients plus 2 tablespoons water in a microwave-safe bowl. Microwave 1-2 minutes. Stir the mixture and microwave for an additional 30 seconds – 1 minute until plums are broken down into a fruit spread. Mixture can bubble over – be ready to hit the stop button, if needed.
Caution: the bowl will become very hot in the microwave. Use oven mitts to remove safely.
Remove from heat. Compote will thicken once cooled. Store covered in the refrigerator until ready to use. Serve with love!
Plum compote can be stored in the refrigerator in an airtight container for about one week.
