8 oz tempeh (~ one full package)
2 tablespoons peanut butter
1 tablespoon low-sodium soy sauce
1 lime, juiced
3 tablespoons water
Whisk together the peanut butter, low-sodium soy sauce, lime juice and black pepper until well combined.
Cut the tempeh into 1-inch cubes. In a bowl with the mixture, toss to coat the tempeh, then marinate in the fridge for at least 2 hours but up to 24 hours.
Line a baking sheet with parchment paper or a silicone mat, add tempeh and bake for 22-30 minutes at 375 °F or until caramelized and deep golden brown.
Remove from oven and enjoy fresh!
