3-4 small beets, peeled
3 tablespoons of olive oil
Balsamic vinegar to taste
2 ounces walnuts
Salt and black pepper
1/2 lime
2 cups of arugula (optional)
3.5 ounces feta cheese
Wash, peel and cut the beets into square chunks.
Once beets are cut, put them in a separate bowl and sprinkle with lime.
Add salt and pepper to taste and mix well.
Sprinkle with crushed or chopped walnuts. Optional: you can mix beets and walnuts with 2 cups of arugula and feta cheese. Enjoy this delicious salad!
