You don't need an oven to make apple crisp! Made in the microwave, this anytime dessert is ready in a snap.

1 medium apple, rinsed, cored and cut into bite size pieces
a drop of vanilla extract
pinch of cinnamon (~1/8 teaspoon)
2 tablespoons rolled oats
1/2 teaspoon olive oil
2 teaspoons maple syrup
1/4 teaspoon cinnamon
pinch of salt
Combine cut apples, vanilla and cinnamon in a microwave safe bowl or plate. Cover with a paper towel to prevent splattering. Cook in the microwave for 3 minutes, stirring the apples every minute to distribute the heat and cook evenly. Cook until apples are fork tender but not mushy. Adding more time if needed in 30 second increments.
In the meantime, while the apples are cooking in the microwave, combine rolled oats, olive oil, maple syrup, cinnamon and a pinch of salt.
Sprinkle oat mixture over the cooked apples and microwave for 1 minute. Carefully remove from the microwave and allow it to rest and cool slightly before eating.
CAUTION: the bowl or plate will become VERY HOT in the microwave. Use oven mitts to remove safely.
