Carrot Ginger Dressing
This homemade dressing is quick, easy and healthier than store-bought commercial dressings. Carrots are blended whole to keep the fiber and antioxidants. It’s a keeper!

1/3 cup olive oil
1/3 cup unsweetened rice vinegar
2 large carrots, peeled and chopped (about 2/3 cup)
2 tablespoons fresh ginger, peeled and chopped
2 tablespoons lime juice
1-2 tablespoons honey or maple syrup
1 1/2 teaspoons toasted sesame oil
1/4 teaspoon salt
Add all the ingredients to a blender and blend until smooth. Serve with love!
Store leftovers in an airtight container in the fridge for 1-2 weeks.
