Cooking eggs in the microwave is quick and easy. Choose a microwave safe mug or bowl and cover with a paper towel to prevent splatters. Add in veggies for an extra boost!

1 tablespoon olive oil
2 eggs
2 tablespoons mozzarella cheese
2 tablespoons milk (almond/ low-fat/non-fat)
1/2 cup spinach
1/2 cup bell peppers, chopped
1/2 cup mushrooms, sliced
1/4 cup tomatoes, chopped
1/2 broccoli, chopped
Coat inside of microwaveable mug with olive oil.
Beat eggs together with milk, cheese and additional veggies, if using.
Cover with a paper towel and microwave on high for 1 minute.
Remove mug and stir. Cook for an additional minute or until eggs are set.
Allow to sit for a few minutes to cool before eating as contents and mug will be HOT.
