Put down the crackers and grab a cauliflower! This dish makes a balanced snack, main vegetarian dish or a side to your favorite protein. The "steak" refers to the technique of slicing the cauliflower and seasoning it with traditional steak seasoning. The cheddar cheese makes this dish reminiscent of cauliflower & cheese from my youth.

2 tablespoons olive oil
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon paprika
salt and pepper to taste
1 head cauliflower
1/2 cup cheedar cheese, grated
Preheat your oven to 400° F. Line a baking sheet with parchment paper or aluminum foil for easy clean up.
Combine olive oil and spices in a small bowl and set aside.
Wash the cauliflower. Remove the leaves from the bottom of the cauliflower, leaving the stalk in place. Slice the cauliflower in half. Slice those two pieces in half to create your “steaks”. Place them on the lined baking sheet and spoon or brush the oil mixture on all sides. Bake for 10 minutes. Flip and return to the oven for an additional 10 minutes and the stalk is fork tender.
Sprinkle with cheddar cheese and bake until melted. Serve with love!
Store leftovers – if there are any! - in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350° for 10-15 minutes.
