Preheat your oven to 400° F. Line a baking sheet with parchment paper for easy clean up.
Wash and dry the sweet potatoes. No need to peel the sweet potato.
Cut into ¼ - ½ inch rounds. Cut the rounds into ¼ - ½ inch wide sticks.
Place the fries in a mixing bowl and gently toss them with olive oil.
In a small bowl, mix together the seasoning. Sprinkle the seasoning mix over the fries and toss until evenly combined, being careful not to break them.
Spread the fries on the baking sheet in a single layer so they are not touching (this ensures even cooking and crispness – otherwise they will steam!). Place in the oven and bake for 20 minutes. Remove from the oven and flip the fries. Return to the oven and bake until the fries are browned on the outside and soft in the middle, about 10 minutes more. Serve with love!
Store leftovers – if there are any! - in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350° for 10-15 minutes.
