Plant-Based Pesto
A traditional Italian sauce that is thick, herbal, and garlically! This sauce is a good source of healthy fats with a variety of uses.
Normally, pesto includes cheese, but we have swapped that out to make our own plant-based pesto!
4 cups of fresh basil
2/3 cup of nutritional yeast
1/4 cup of pumpkin seeds
2 tbsp hemp seeds
2 garlic cloves
1/3 cup olive oil
1 lemon, juiced
Salt and pepper, to taste
Combine all ingredients in a blender or food processor
Blend ingredients until a creamy, thick texture is reached
This can take up to ___ minutes, depending on the blender type and settings you use
Scoop the pesto into a sealable jar and store it in the refrigerator.
Enjoy as a pasta sauce, over toast, vegetable dip, salad dressing, or much more!
