Wash, scrub and peel the turnips. Cut the turnips into approximately 1 inch pieces.
Preheat the oven to 425°F and line a baking sheet with parchment paper for easy clean up.
Place the turnips on the baking sheet. Add olive oil and sprinkle with salt and pepper. Toss to coat. Spread the turnips evenly on the baking sheet.
Roast for 20 - 35 minutes, or until tender and browned at the edges. Serve with love!
Store leftovers in an airtight container in the refrigerator for up to 3 days. You can enjoy them warm or cool tossed on a salad.
