Apple Pie
Ingredients for 8-inch pie:
Pastry for 2 8" crusts (top and bottom)
1/2 c sugar
3 T flour
1/4 t nutmeg (but we just use another 1/4 t of cinnamon instead)
1/4 t cinnamon
Dash of salt
5 cups of thinly sliced pared tart apples (about 5 medium)
Ingredients for 9-inch pie:
Pastry for 2 9" crusts (top and bottom)
3/4 c sugar
1/4 c flour
1/2 t nutmeg (or more cinnamon)
1/2 t cinnamon
Dash of salt
6 cups of thinly sliced pared tart apples (about 6 medium)
Instructions (regardless of size):
Pre-heat oven to 425º F
Prepare pastry.
Mix dry ingredients. Stir into apples.
Pour apples into pie crust.
Cover with top crust with slits cut into it.
Bake 40 to 50 minutes (usually 50).
Pie is done when you can push a fork into the top with very little resistance. It depends on how firm you want the apples. We like them at "apple-sauce" firmness.
