Montezuma Pie
6 c boned and skinned cooked turkey, cut into 1/2 by 2" pieces.
Green Sauce (see below)
2 c sour cream
1 dozen corn tortillas cut into 1 1/2" pieces
1 1/2 lbs jack cheese, shredded
Arrange half the turkey pieces in a lightly greased 9x13 baking dish. Spread over half the green sauce and half the sour cream. Top with half the tortilla pieces and half the cheese. Repeat layers with the rest of ingredients. Cover dish with foil and bake at 375º for 40 min. Uncover and bake an additional 8 minutes or until cheese is bubbly and casserole is hot throughout. Cut into squares to serve.
Green Sauce
1 can (14 oz) tomatillos, drained. Or use 1/2 lb fresh tomatillos ... peeled, washed, quartered, brought to boil covered in water (1 lb fresh)
1 small onion, cut into pieces (2 onions)
2 cloves garlic (3 cloves)
1 can (4 oz) whole California green chiles (pith and seeds removed). (1 can)
1 bunch (about 1/2 c) chopped fresh coriander (cilantro) (1 full bunch)
1 t salt (1 t)
1/2 t sugar (1/2 t)
( ) = ingredient amounts for doubled sauce
Mix ingredients for green sauce in blender until smooth.
Cook's recommendations: double the sauce and sour cream. And probably the cheese.
