Zucchini Casserole
1/2 c rice
1 1/2 lb Zucchini (cut thin)
3/4 c grated cheese
1 can of cream of mushroom soup (heat with 1/4 c water)
Put sliced zucchini in the bottom of a buttered casserole dish. Layer 1/3 c rice, 1/3 c cheese, 1/3 c zucchini and top with cheese. Pour heated soup over top. Bake at 350º for 30 mins covered. Uncover and bake an additional 20 mins.
