Spinach Quiche
4 eggs
3/4 c half 'n' half
1 1/4 c milk
Spinach
2 T lemon juice
1/2 lb feta cheese
2 T fresh parsley
Parmesan
Salt & Pepper
Whip eggs. Mix in milk and half 'n' half. Pour mixture over mixture of spinach, feta, lemon juice, and parsley in a pie crust. Top with salt, pepper, and parmesan. Bake at 375º for 35 mins or until knife comes out clean.
Pie Crust
1/2 c oil
1/4 c milk
2 c flour
2 T Baking Powder
1/2 t salt
Mix all ingredients. Let sit wrapped in wax paper 15 mins before rolling. Bake 400º for 12 min filled with beans for baked pie crust.
Makes 2 9" pie crusts.
