From the back of a Mission brand Lasagna noodle package
Sauce:
1/4 c oil
1/2 lb ground beef
1 small onion, chopped
1 clove garlic, crushed
1 can (28 oz) tomatoes
1 can (6 oz) tomato paste
3 Tbsp. grated Parmesan cheese
1 Tbsp. parsley
1 tsp salt
1/4 tsp pepper
1/8 tsp basil
In a large frying pan, brown meat, onion and garlic in oil. Add remaining ingredients and mix well. Cover and simmer for 45 minutes (or much longer, for more melding of flavors). Stir as-needed to prevent scorching.
Noodles and Assembly:
1 pkg (12 oz) lasagne noodles
1/2 lb Ricotta
1/2 lb Mozzarella cheese, grated or sliced
1/2 c grated parmesan cheese
Cook lasagne noodles according to directions on package. Butter a 3 qt oblong baking dish and spoon a little sauce on the bottom.
Arrange half the lasagne over the sauce. Spread half the ricotta and half the mozzarella cheese over lasagne; top with half the meat sauce.
Repeat the layers.
Top with parmesan cheese.
Cook uncovered, 350F for 30 minutes (at least) or until thoroughly heated.
Remove from oven and let stand for 10 minutes before serving.
Yield 12 servings, approx. 3" x 3"
Cook's notes:
Consider doubling the sauce and the ricotta
Cook for 45 minutes while covered in foil, 8 or so minutes uncovered. And probably let it stand for 15 minutes or more to make it easier to cut.
