Nut Loaf - Banana or Orange etc
3/4 c sugar
2 T shortening
1 egg
3/4 c milk
3/4 c orange juice
4 t grated orange rind
3 c flour
3 1/2 t baking powder
1 t salt
3/4 c chopped nuts
Mix throughly: sugar, shortening, and egg. Stir in milk, juice, and rind. Sift together flour, baking powder, and salt, and then add to mixture. Blend in chopped nuts. Pour into well greased 9x5x3" pan. Let stand 20 minutes before baking. Bake about 70 mins at 350º. (Test with toothpick)
Banana Bread (Banana Nut Loaf):
Omit orange juice and rind. Increase sugar to 1 c and add 1 c mashed banana with milk.
Prune Nut Loaf:
Omit orange juice and rind. Decrease milk to 1/4 c and add 3/4 c prune juice. Add 1 c well drained, chopped, pitted,cooked prunes with milk.
White Nut Loaf:
Omit Orange juice and rind. Increase milk to 1 1/2 c .
Apricot Nut Loaf:
Increase sugar to 1 c. Add 1 c finely chopped dried apricots with nuts.
Fig or Date Nut Loaf:
Omit orange juice and rind. Use brown sugar instead of white sugar. Increase milk to 1 1/2 c. Add 3/4 c chopped dates or figs with nuts. Bake about 80 mins.
