Blueberry Puff
2 eggs
1/2 c flour
1/2 c + 3 T powder sugar (separated)
1 1/2 c milk
3 T unsalted butter (melted)
1 pt fresh blueberries or 16 oz frozen
1 c sour cream
Beat eggs until frothy. Mix in 1/4 c powder sugar and flour. Add milk and butter. Pour into 9" pie pan. Bake 20=25 mins at 400ºF.
Rinse blueberries and mix with 3 T powdered sugar. Place in refrigerator until pancake is done.
When pancake is done, take out of oven. Top immediately with 1/4 c. powdered sugar, sour cream and blueberries. Serve warm.
