2 cups Mashed Potatoes
1/3 cup Bread crumbs, fine, dry
2 large Egg yolks
2 large Egg whites, Beaten silly, but not dry
3/4 tsp Salt
1/4 tsp Pepper
1/3 cup All-purpose flour
Mix, mashed potatoes, bread crumbs egg yolks, salt pepper and flour. Fold in beaten egg whites. Place on a floured board and roll to a pencil thickness. Cut into 2 inch strips. Drop dumplings into boiling salted water. Cook until dumplings float to top. To serve, sauté dumplings in butter and garlic until warm.
