4 cups Flour
1 tbsp Sugar
2 tsp Salt
1 cup Shortening
3/4 cup Butter
1 large Egg
1/2 cup Water
1 tbsp Vinegar
Add together 4 cups flour, sugar, salt. Cut shortening and butter in flour mixture with wire whisk until crumbly. Add together water, egg & vinegar. Combine flour and egg mixture until just smooth. Do not overwork the dough so that it will be tender and flaky. Chill for at least 1/2 hour. Roll out on a floured board or cloth. Bake at 325 degrees until lightly browned. Makes 4 crusts.
I find it helpful to freeze and grate the butter into the flour mixture.
