Ingredients
4 cups Cherries, washed, pitted and chopped
4 cups Tomatoes, washed, pitted and chopped
1 tbsp Lime Juice
1 large Bell pepper, chopped
1/2 large Red bell pepper, chopped
1 cup Sweet onions, chopped
2 each Jalapeno, seeded and chopped
1 tbsp Oregano, chopped
1/2 cup Vinegar
1 1/2 cloves Garlic, chopped
1 tsp Cayenne pepper
1 1/2 tbsp red pepper flakes
1 tsp Hot pepper sauce
2 cups Sugar
1 tbsp Salt
1 can Tomato paste
Preparation
Combine all ingredients except tomato paste in a large pot and cook until desired consistency. Adjust seasonings. Stir in tomato paste. Pour hot salsa into hot sterilized jars, wipe rims and apply lids. Process in a boiling water canner for 10 minutes.
