Hickory smoked ribs...rub both sides of ribs with a good rub. Let sit covered in fridge overnight. Smoke the ribs right on the rack for 2 hours, at 237 degrees. Take ribs out and cover with heavy duty foil, pour liquid (coke, apple cider) under ribs ,seal tightly with foil and cook at 227 for 3 hours. Take ribs out, sauce them with good BBQ sauce and cook uncovered for 1 hour. Let sit tented for 15 minutes. Yum, 2-3-1 method
