Ingredients:
2 6-8 oz chicken breasts, skinless, boneless, halved and pounded thin
2 Eggs
2 tbsp Flour
3/4 cup Parmesan cheese
1/2 cup Panko bread crumbs
1/2 tsp Garlic powder
1/4 tsp Dried oregano
1/4 tsp Pepper
4 oz Mozzarella cheese
Tomato sauce
1/3 cup Vegetable oil
Preparation:
Mix egg and flour in a bowl and whisk until combined. In another bowl, mix Parmesan cheese, bread crumbs, garlic powder, oregano, and pepper.
Dredge chicken in egg mixture and then in Parmesan/bread crumb mix. Fry in oil until crispy. Place chicken on a rack over a cookie sheet and sprinkle with mozzarella cheese. Place in oven on keep warm until you finish cooking all of the chicken. Serve on top of pasta and top with tomato sauce. This will keep the chicken crispy.
