Ingredients
1 cup Butter
2 large Egg
2 cups Brown sugar, packed
1 3/4 cups Flour
1 tsp Baking soda
1 tsp Cinnamon
1/2 tsp Salt
3 cups Oats, quick-cooking
10 oz Heath Bit O Brickle Toffee Bits
1 cup Sweetened coconut flakes
Preparation
Heat oven to 375 degrees. Lightly greese cookie sheet. Beat butter, eggs, brown sugar and vanilla until well blended. Stir in oats, brickle and coconut, if desired, with spoon. Drop dough by rounded teaspoons about 2 inches apart onto prepared sheet. Bake 8 to 10 minutes or until edges are lightly browned. Cool 1 minute; remove to wire rack. About 4 dozen cookies.
