Pinto Bean Meatless Meatballs

Ingredients
1 ½ cans (15 oz. each) Pinto Beans, drained and rinsed
½ medium yellow onion, grated
2 cloves garlic, minced
¼ cup chopped mint
1 egg
½ cup dried breadcrumbs
½ tsp kosher salt
½ tsp freshly ground black pepper
Use a hand masher or food processor to puree the pinto beans and combine them with the rest of the ingredients. Form them into balls about the size of a ping pong ball, place on a baking sheet, set aside, and continue with the soup recipe.
