Mochi Recipe

Mochi

    • 1 cup mochiko (rice flour)

    • 1/2 cup sugar

    • 1 cup liquid (water plus liquid flavorants)

    • Dry flavorants and food coloring

Mix ingredients together. Microwave on high for 5-6 minutes or until set. Plop onto a cutting board liberally dusted with mochiko or katakuriko (roasted soybean flour). Cut into bite sized pieces when cooled.

For flavorants: I've used pineapple juice (instead of the water); 1/4 cup of lemon juice and 3/4 cup of water to make 1 cup liquid; 1 tbsp green tea powder; 1 tbsp ginger. Let your inspiration guide you...
