4 cups flour
½ tsp salt
2 ¼ tsp baking soda
2 tsps ground ginger
1 ¼ tsp ground cloves
1 ¼ tsp cinnamon
1 stick unsalted butter, softened
½ cup vegetable shortening
2 cups sugar
½ cup unsulfured molasses
2 large eggs
Preheat oven to 325°; line two large cookie sheets with parchment paper.
Whisk together flour, salt, and spices.
Beat butter, shortening, and sugar until light. Beat in molasses then add one egg at a time. Gradually eat in flour mixture.
Put additional sugar in a bowl. Form 1” balls of dough and coat with sugar. Flatten slightly on cookie sheets 4” apart.
Bake for 8 – 15 minutes until puffed and golden.
When cool, dip ½ cookie in melted, white chocolate.
