2 cups all-purposed flour
¾ cup sugar
1 ½ tsp baking powder
½ tsp baking soda
½ tsp. salt
1 egg, slightly beaten
2 Tbsp grated orange rind
½ cup orange juice
3 Tbsp melted butter or margarine
2 Tbsp hot water
1 ½ cups cranberries, halved
Preheat oven to 350 degrees.
Well grease a 9x5x3-inch loaf pan. Sift flour, sugar, baking powder, baking soda and salt into a large bowl. In a small bowl combine egg, orange rind, juice, butter and hot water. Add to dry ingredients and mix thoroughly. Fold in cranberries. Turn into prepared pan. Bake for 50 minutes or until cake tester inserted in center comes out clean. Remove from pan and cool on wire rack.
Note: Can use frozen cranberries.
