Ketchup or Chili Sauce or Commercial Cocktail Sauce
Prepared Horseradish (not what American call Horseradish Sauce which has added mayo or cream, and preferably not the stuff that has mustard oil added, if I recall Dad’s complaints)
Tabasco sauce
Bourbon
Begin with almost as much ketchup/chili sauce/cocktail sauce as you think you’ll need sauce. Add a sizeable dollop of horseradish so it is a clearly evident part of the mixture. Then add a dash or two of Tabasco, perhaps more if you are starting with ketchup. Then add the bourbon, a decent slug, but not enough to thin it out too much – think of it as thinning out the sauce back to the consistency of ketchup after it has been thickened with horseradish. Taste and adjust seasonings accordingly. If it knocks you out of your socks, add more ketchup.
