Crust
2 cups all purpose flour
½ cup powdered sugar
1 cup margarine or butter, softened
Filling
4 eggs, slightly beaten
2 cups of sugar
¼ cup flour
1 tsp baking powder
¼ cup lemon juice
Lemon peel from 1 lemon
Glaze
1 cup powdered sugar
2 to 3 Tbsp lemon juice
Heat oven to 350º.
In large bowl, combine 2 cups of flour, ½ cup powdered sugar, and butter at low speed until crumbly. Press mixture evenly in bottom of ungreased 13x9-inch pan. Bake for 20-30 minutes or until light golden brown.
In large bowl, combine eggs, sugar, ¼ cup flour and baking powder; blend well. Stir in lemon juice and lemon peel. Pour mixture over warm crust. Return to oven and bake 25 to 30 minutes or until top is light golden brown. Cool completely.
In small bowl, combine powdered sugar and enough lemon juice for desired glaze consistency; blend until smooth. Drizzle over cooled bars. Cut into bars.
