My friend recently shared a recipe with me for Anzac biscuits, which are traditionally baked and eaten on Anzac Day. This is a day of remembrance observed in Australia and New Zealand every year on April 25th, in order to commemorate all Australians and New Zealanders—past and present—who have served and died in any wars, conflicts and/or peacekeeping operations. However, Anzac Day falls on April 25th specifically, because the day was originally just supposed to honour the members of the Australian and New Zealand Army Corps (ANZAC) who served in the Gallipoli campaign during the First World War, then expanded to pay tribute more broadly to all fallen troops. So, I thought it’d be nice to inform Nepean students about this day of importance, through briefly explaining the historical significance, as well as sharing my friend’s family recipe for Anzac biscuits.
Ingredients:
1 cup rolled oats
1 cup plain flour
3/4 cup sugar
3/4 cup desiccated coconut
1 1/2 tablespoon golden syrup
1/2 cup butter or margarine
1 teaspoon baking soda
2 tablespoons boiling water
Instructions:
1. Mix oats, flour, sugar, and coconut together.
2. Melt syrup and butter together.
3. Mix soda with boiling water, and add to the melted butter and syrup.
4. Add mixture to the dry ingredients.
5. Place tablespoonfuls of mixture on a greased cookie sheet.
6. Bake in the oven at 325°F for 12 to 15 minutes, or until golden brown.
