Fall Recipe: Pumpkin Pancakes

Since summer is right around the corner, one of the many things we have to look forward to are slow mornings where you aren't in a rush to get to school, which means more opportunities to put on an upbeat playlist and take your time making as many waffles as you want: a perfect way to wind down after all of the exams this year. Especially with this extremely simple recipe that only takes a few steps!


Ingredients:


- 2 cups flour

- 1 tablespoon and 1 teaspoon baking powder

- 2 tablespoons sugar

- 2 eggs

- 6 tablespoons salted butter, melted

- 1½ cups milk

- 1 teaspoon vanilla


Directions:


1. Mix together the flour, baking powder, and sugar. In a separate bowl, combine the eggs, butter, milk and vanilla.


2. Pour the wet ingredients in with the dry, and stir until combined. Set the batter aside, and heat the waffle maker.


3. Pour batter into the waffle maker, and cook until golden brown.


We all need something to look forward to during exam season, and this is what I had in mind during all of June. Hopefully this brings you the same kind of joy and relaxation that it does for me whenever I have the time to put on Uptown Girl and make a million waffles. Enjoy!
