Method
Fry fish in a little olive oil with chopped ginger and garlic and set aside. In separate pan, soften onions, pepper and chilli in olive oil, add spices and fry.
Combine the two and half cover with water. Simmer for 10 minutes. Poor off a little liquid and combine with the Quark, then add Quark mixture back to the pan.
Bring back to the boil and serve, garnished with basil or mint.
