Ingredients
2 substantial salmon fillets
1 lime (juice and zest)
1 tsp paprika
<1 tsp chilli flakes
olive oil
mushrooms and peppers to stir fry - with garlic
a handful of chopped fresh parsley
bread or (mashed) potatoes to serve with
Method
Pre-heat oven to 160C.
Put the salmon fillets on a lightly oiled baking tray. Drizzle over the lime juice and zest and a little olive oil. Sprinkle with the chilli flakes and paprika and season with salt and pepper. Bake for about 10 minutes, or until cooked through.
Meanwhile, heat a tablespoon of oil in a frying pan. Add the peppers and stir-fry over a high heat for 5 minutes. Add the mushrooms and stir-fry until cooked to your liking. Add the garlic and fry for 1 minute, then stir in the parsley. Serve immediately with the salmon.
