125ml double cream
38g caster sugar
19ml lemon juice
shortbread? blueberries? raspberries?
Method
Melt cream and sugar together in a pan and then allow to boil for 3 minutes, stirring and watching like a hawk. Take off heat and add the lemon juice. All to cool a little bit and then pour into shot glasses (makes 2 portions of almost a double shot in volume).
Serve with shortbread and/or fruit.
