Dense chocolate dessert
2 egg yolks
40g sugar
90g chocolate
70g unsalted butter
2 tbsp cognac
creme and raspberries/mandarins
Method
Whisk the egg yolks and sugar together until light and creamy
Melt the chocolate
Stir the slightly cooled chocolate into the egg yolks
Melt the butter and stir in with the cognac
Makes 2 small ramekins of very solid dessert - possibly enough for 2 meals with fruit and cream
