2oz salted butter
2oz plain flour
3oz grated strong cheese
large pinch of cayenne + mustard powder
yolk of an egg
Method
Pre-heat oven to 200C.
Combine the butter, flour and spices using a Zyliss mixer. Add cheese and continue to mix.
Place in a bowl and add the egg yolk and combine.
Refrigerate for 15 minutes.
Roll out on a floured surface to a depth of 3mm. Cut into straws.
Bake for 6 minutes.
