Vodka pasta
Ingredients
175g fusilli/penne
1/2 small onion fried gently in 1 tbsp butter with a little salt
1/2 tin of PLUM tomatoes (need to drain them, not using all the juice)
small clove of garlic
1/2 tsp chilli flakes
65g of tomato puree
50ml double cream
30ml vodka
parmesan to finish
Method
Fry the onion in the butter and salt (soft and golden). Add garlic and chilli and fry for another couple of minutes, add tomato puree and the tomatoes. Mash gently and simmer for about 10 minutes until thick.
Meanwhile cook the pasta until nearly ready.
(Blend the tomato mixture to a purée.) Stir in the cream and vodka, warm through and season to taste.
Toss the pasta with the sauce, adding a little of the cooking water if needed to emulsify. Serve with grated parmesan.
