Baked haddock with tomato salsa
Ingredients
2tbsp olive oil
2 cloves of garlic chopped and softened
a generous half tin of tomatoes
chopped tsp of capers
tiny slosh of red wine
chopped fresh rosemary, salt & pepper
2 haddock/cod steaks
asparagus tips (baked at same time as fish with oil and sprinking of parmesan) and mashed potato to serve
Method
Add tomatoes and wine to softened garlic and simmer until cooked and reduced little, add capers, rosemary and season.
Heat oven to 200C fan.
Cook fish, oiled and with a slice of lemon under each one, and asparagus, for 10 minutes.
Spoon sauce onto cooked fish and serve with asparagus and potato.
