Pine nut-crusted salmon
Ingredients
- 2 fillets of salmon, skinned
- [breading] 1/2 cup breadcrumbs, 1/4 cup pine nuts, 1 tbsp parsley, salt & pepper - whizzed in a blender
- [glaze] 1/2 tbsp whole grain mustard, 1 tbsp honey, 1 tbsp olive oil, 1/4 tsp garlic, 1/4 tsp lemon zest - mixed together
- Potatoes for boiling and buttering and serving with a green vegetable
Method
Preheat the oven to 190C.
Mix the glaze and spread/rub all over the fillets.
Coat the fillets as thickly as possible with the breadcrumb mixture.
Place onto a baking tray and sprinkle over the rest of the breadcrumb mixure.
Bake for 20-25 minutes.
