Baked swordfish steaks

Ingredients

  • 1 tbsp lemon juice

  • 1 tbsp olive oil (or more)

  • 1 tbsp finely chopped fresh basil

  • 1 tsp capers

  • 3 tbsp unsalted butter

  • salt & pepper

  • new potatoes for boiling and buttering

  • bunch of asparagus baked (same heat, same time) with oil, S&P and 1-2 tbsp grated parmesan

Method

Combine butter, capers, basil and an extra half teaspoon of lemon juice and return to fridge to resolidify. Turn the steaks in the lemon juice and oil, S&P and return to fridge to marinate (15min).

Turn on the oven to pre-heat to 200C.

Prepare the potatoes and asparagus.

Put the potatoes on to boil and the asparagus in the oven

Heat 1 tbsp oil in a cast-iron casserole and cook the steaks, a few minutes each side, then put the uncovered casserole in the oven for about 10mins. Serve with a generous dollop of caper butter on the top.
