Pit the cherries. Bring the wine, sugar and bay leaves up to boiling, add the cherries and reduce to a simmer. Simmer for 5-10mins until cherries are soft but still have their shape. Remove the cherries and boil the liquid to reduce until it coats the back of a spoon. Poor the syrup over the cherries and leave to steep for up to 3 days! Serve with mascarpone (may not need all the syrup - use for a Campari/lime juice cocktail).
