Ingredients
500g cod fillets
1 tbsp butter
1 tbsp flour
284 ml milk
2/3 tbsp Dijon mustard
1/2 tsp lemon zest
1/4 cup grated parmesan
1/2 tsp sage or rosemary or other herb (supposed to be summer savoury!)
1/2 cup grated cheddar
1/2 cup breadcrumbs
1/2 tbsp olive oil
Method
Make a white sauce with the butter, flour and most of the milk (250ml is enough).
Add lemon zest, mustard, herb and salt and pepper.
Add parmesan. Check for consistency and add milk if necessary to leave a stiff white sauce.
Arrange fish in bottom of greased baking dish.
Pour sauce onto fish.
Top with grated cheddar.
Mix breadcrumbs with olive oil and sprinkle over cheese. (Add extra herbs to crumbs if the spirit so moves.)
Bake at 170C (fan) for 45 minutes.
