Ingredients
1lb firm white fish, chunked into 1" cubes, marinated in 1 tbsp lime juice, 1/4 tsp salt, black pepper
2 cloves of garlic, crushed
1 small onion, finely diced
1 large red pepper, sliced
1 tbsp cumin powder, 1 tbsp paprika, 1 tsp cayenne
half a tin of coconut milk
half a tin of tomatoes
1/3 cup fish stock
olive oil
coriander and 1 tbsp lime juice to garnish at last minute
Method
Get the onions softening with the garlic and the tomato reducing in a separate pan.
Then fry the fish briefly in olive oil to sear and cook, and reserve. When the onions are softened add the red pepper and fry a little longer.
Combine the tomato and onions and add the remaining ingredients and reduce for 10mins. Add fish to reheat.
Stir through lime juice and serve on rice, garnished with coriander.
