Steamed ginger pudding

For a 3-cup pudding basin

Ingredients

  • 2oz butter and 2oz white sugar creamed together

  • 1 large egg

  • 3oz self-raising flour

  • 1 1/2oz stem ginger finely chopped

  • 1 1/2 heaped dessertspoons of golden syrup

  • string, baking paper, foil!

Method

Butter the pudding basin and prepare baking paper/foil lid with fold down the middle for expansion.

Beat egg into creamed mixture with a little of the flour. Beat in the rest of the flour and the ginger.

Pour the syrup into the basin and spoon the mixture over the top.

Smooth out top a little, cover with paper then foil, tie and put in a steamer for at least an hour (until dry on top).

Sauce

Heat 150ml of milk with 1/2 tbsp of grated fresh ginger to boiling, then take off heat and leave to stand for half an hour. Throw away the ginger. Make a white sauce with 1/2oz butter, 1/2oz flour. Add 1oz of sugar and serve.
