Midtown fish masala
Ingredients
- 500g firm white fish
- 1 large or 2 small onions
- 2 green chillis
- 1" ginger root
- 1tsp curry powder/garam masala
- 1tsp coriander
- 1 tin/packet chopped tomato
- oil and butter
- garlic paste, dried red chilli, lemon juice, salt
- rice
Method
- Skin and chunk the fish, rub with lots of garlic paste, sprinkle with a shake of dried chilli and a shake of salt and pour lemon juice over. Leave to marinate.
- Soften the onion completely in a mixture of oil and butter then add the chopped chilli and ginger and cook for another couple of minutes. Add the spices and fry briefly.
- Add the tomato and the fish and cook covered until the fish is ready.
- Serve with the rice.
