Midtown fish masala

Ingredients

  • 500g firm white fish
  • 1 large or 2 small onions
  • 2 green chillis
  • 1" ginger root
  • 1tsp curry powder/garam masala
  • 1tsp coriander
  • 1 tin/packet chopped tomato
  • oil and butter
  • garlic paste, dried red chilli, lemon juice, salt
  • rice

Method

  • Skin and chunk the fish, rub with lots of garlic paste, sprinkle with a shake of dried chilli and a shake of salt and pour lemon juice over. Leave to marinate.
  • Soften the onion completely in a mixture of oil and butter then add the chopped chilli and ginger and cook for another couple of minutes. Add the spices and fry briefly.
  • Add the tomato and the fish and cook covered until the fish is ready.
  • Serve with the rice.
