Salmon with herby lentils

Ingredients

  • 2 salmon fillets
  • 4oz lentils
  • smoked salmon (prosciutto!) slices
  • juice of 1 lemon
  • good handful of fresh herbs (parsley, basil, mint) chopped
  • half a packet of spinach leaves chopped
  • 4fl oz natural yoghurt
  • potatoes

Method

Heat oven to 220C fan.

Cook the lentils until tender.

Oil and season the fillets. Wrap with the smoked salmon (roughly, with gaps). Drizzle over the oil. Place in a small roasting tin.

Bake for 10 minutes.

Drain most of the water from the lentils, season and add lemon juice and 2 'lugs' of olive oil. Just before serving stir in the spinach and herbs on a high heat.

Serve with mashed potato and the yoghurt.
